Fish Suruwa (Fijian Fish Curry)

Ingredients:

  • 500g firm white fish fillets (such as snapper or mahi-mahi), cut into chunks
  • 1 onion, finely chopped
  • 2-3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2-3 green chillies, sliced (adjust to your spice preference)
  • 2 tomatoes, diced
  • 1 can coconut milk (about 400ml)
  • 1 cup water
  • 2 tbsp vegetable oil
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder (adjust to your spice preference)
  • Juice of 1 lime
  • Fresh coriander leaves for garnish
  • Salt to taste

Instructions:

  1. In a large pot or skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onions and sauté until they become soft and translucent.
  3. Stir in the minced garlic, grated ginger, and sliced green chillies. Cook for another minute until the aromatics release their fragrance.
  4. Add the cumin powder, coriander powder, turmeric powder, and red chilli powder to the pot. Mix well to coat the onions and spices.
  5. Toss in the diced tomatoes and cook until they turn soft and form a thick paste.
  6. Pour in the coconut milk and water, and bring the mixture to a gentle simmer.
  7. Add the fish chunks to the curry base. Make sure each piece is submerged in the flavorful sauce.
  8. Season with salt according to your taste.
  9. Cover the pot and let the fish simmer in the coconut curry for about 10-15 minutes or until the fish is fully cooked and tender.
  10. Squeeze the lime juice over the curry and give it a final stir to incorporate the citrusy flavor.
  11. Garnish the Fish Suruwa with fresh coriander leaves for added freshness and aroma.
  12. Serve the delightful Fijian Fish Curry with steamed rice or roti for a delicious and comforting meal.
